By now, you would know how much seafood we consume in this household. With that, i am always finding ways to make them interesting and different from the last dish i made and add to my repertoire. I have a family with growing standards and expectations that i need to always be ahead of my game.
This is one of my many seafood spaghetti favourite. I have been asked many times for the recipe so here it is. Enjoy and you're welcome!

Seafood Spaghetti in Creamy Garlic & Tomato Sauce
Spaghetti [enough for 4] | 12 Fresh Gambas | 10 Large Scallops | 500g Clams | 1 tbsp Tomato Paste | 2 Large Tomatoes [finely chopped] | 3 Cloves Garlic [grated] | 1 Medium White Onion [finely chopped] | 150g Double Cream | 2 tbsp Sunflower Oil | 125g Butter | Sea Salt & Pepper | Cup of Water | Chopped Garlic Chives [leave some for garnishings]
Cook the spaghetti using the packet instruction. This usually takes 8-10 minutes but keep checking to make sure you don't over cook. They should be al dente.
Heat a frying pan on medium heat. Add 1 tbsp oil and the butter to the pan and when hot, add the garlic and fry until brown. Add some salt & pepper to the scallops and place them on the frying pan. Keep the pan hot and the scallops should be sizzling. Sear the scallops for roughly 1 minute each side. Shake the pan slightly to turn them. Set aside on a bowl keeping the oil in the pan.
Whilst the pan is still hot, add all the gambas. Fry for 3 minutes. Season with a little salt & pepper. Add the french crevettes to the pan and continue frying for another minute. Tossing the pan every few seconds. The prawns should all turn orangey brown colour and the shell starting to crisp up. Transfer to a bowl.
Bring the pan back to the heat and add the remaining 1 tbsp of oil. Once the oil is hot, add the onions to the pan. Cook until soft. Add tomato paste, stir for half a minute and add the fresh tomatoes and clams. Stir, season with salt and pepper, add half a cup of water and cover the pan and let everything simmer for 3 minutes. Add a little more water if the sauce dries up too much. Lower the heat and add the cream. Stir well and let it simmer for 1 minute and add the garlic chives. Take off the heat.
Drain the spaghetti and place in a large serving dish. Scatter the scallops and the prawns on top of the spaghetti. Add the sauce on top and garnish with fresh garlic chives.
Serve with bread or on its own. Enjoy!
