Do you ever dream of making those thick but light and fluffy pancakes? You know, the ones you usually see in the movies or the glossy magazines? Well, today is your lucky day. I have the recipe for you below.
This pancake recipe is so easy and you probably have the ingredients in your kitchen staples already. If not, make sure you stock up. You will probably be making it everyday from now on.
Oh... and Pancake day is just around the corner. Just saying... :)
You can jazz it up by adding fresh fruits and berries with honey [Hayden loves his pancakes with vanilla ice cream on top]. Nutella and banana... or maybe, maple syrup with streaky bacon... you can be as creative as you want. :)
1 ½ Cup Plain Flour | 2 tbsp Caster Sugar | 1 tbsp Baking Powder | Pinch of Salt | 1 Cup Milk | 1 Large Egg | 250 grams Melted Butter
Combine all the dry ingredients and sift in a large bowl.
Add the egg in a mixing bowl and whisk until light. Add the milk and butter and continue to whisk for a minute. Then add to the dry ingredients. Gently mix all the ingredients together with a spatula until everything is combined.
Transfer in a jug with lip. This will make it easier to pour on to the pan than using a spoon.
Heat a non-stick pan on medium heat [i had mine on No.3 setting on the stove]. Once heated, cook the pancakes one at a time until bubbles form on top and flip it and brown the other side.
They are best eaten straightaway...
