The bitterly cold weather have inspired me to create something heartwarming and satisfying for lunch that is easy and can be prepared the day before. That and the fact that i am getting a little tired of the same lunch menus i have to choose from on a daily.
You should all know by now that i love cooking with simple preparation and fast and easy. I don't like to wait too long for my food and i get bored with lengthy ingredients and cooking time. After all, i'm a busy working mum and i simply don't have the time to faff around when it comes to meal times. The same goes with work... i'm always super busy throughout the day with 30 minutes lunch breaks. This takes literally 2 minutes to prepare at work. Simply boil the kettle, add hot water to the jar, stir and enjoy.
You really should try this.
King Prawns & Udon Creamy Tom Yum
Preparation is the key here. Get your ingredients together in front of you and start arranging them in the jar. I prefer to put the noodles in first as a base then add the rest of the ingredients on top then finish off with coriander and limes. When i am ready to put the boiled water in, i take the coriander and limes out. Once i have stirred well, i squeeze the lime on top and add the coriander last.
You can get pre-cooked Amoy Udon Noodles from Waitrose. I used 1 packet per serving. I'm sure you can get the same elsewhere if you don't have Waitrose in your area. You can also use egg noodles or glass noodles if you prefer. Just follow the packet's instructions how to cook them.
I used pre-cooked and ready to eat Honduran King Prawns with Chilli & Coriander from M&S. I love their range of 'ready to eat' seafood and meats which are perfect for Lunch Jars [or salads too but let's focus on Lunch Jars for now... ha ha!]. Five to seven pieces is ample but by all means, you can have as much as you want as long as they fit in the Jar.
The dried chillies can be added according to your taste. I like mine 'suicidal hot'. So use in moderation and as you please.
The Fried Garlic & Fried Shallots can be purchased in any Oriental stores. Some local supermarkets also stock these so worth looking for them in there.
Lastly, the Jars i used are from Kitchen Craft; 500ml Preserving Jar.
King Prawns | Udon Noodles | 2 tbsp Coconut Cream | 1 tbsp Tom Yum Paste | 1 tsp Tamarind Paste | 1 tsp Fish Sauce | 1 tbsp Fried Garlic | 1 tbsp Fried Shallots | 1 Fresh Spring Onions [sliced] | Dried Chillies | Fresh Coriander | Lime [quartered].
Simply arrange all ingredients in a Jar. Take to work. Boil the kettle. Take out the coriander and limes. Put some hot water in the Jar and stir. Squeeze the limes according to your taste. Add coriander. Eat and enjoy!
