Put the lime in the coconut...
I'm always finding delicious ways to get my avocado fix. This is just one of those ways. I love how the flavours of coconut, chillies, lime and coriander marries well with the egg and avocado. Each bite takes me on a holiday somewhere exotic like the Far East. Oh, which reminds me... i so need a holiday!
For now, let's settle for this Omelette whilst dreaming of those exotic destinations.
Exotic Omelette w Chilli & Lime King Prawns & Avocado
You won't believe how easy this is. So easy, i don't even need to make an introduction. Let's get straight to it.
Serves one.
Ingredients
4-6 Pieces Honduran King Prawns [pre-cooked] | Half a Small Avocado [peeled and sliced] | 1 Egg | 1 tbsp Milk | 1.5 tsp Coconut Oil | Dried Chillies [according to your heat level] | Fresh Coriander | Salt & Pepper | Lime [quarter]
Method
Place the King Prawns in a bowl. Add half a tsp of coconut oil, some finely chopped coriander stalks, a little dried chillies, a little salt & pepper. Quickly toss until everything is blended well together. Set aside.
Crack the egg on a bowl, add the milk, a little salt and pepper and whisk. Set aside.
Heat 1 tsp coconut oil in a small non-stick frying pan on medium heat. Add the egg mix and make sure the whole of flat side of the pan is covered. Cook the egg until golden brown before flipping it on the other side.
Place on a plate. Put the sliced avocado, layer with the marinated King Prawns, garnish with more coriander, and if you like, add more dried chillies. Serve with lime on the side.
