Fancy some delicious super breakfast? Like this super bowl of superfood Coconut Chia Pudding. Not only it's super yummy, it's super good for your wellbeing too as it's full of antioxidants and other nutritious elements that's good for your body. Guess, that's why they call it superfood!
I could eat this everyday!
Coconut Chia Pudding
You can make it the night before just before you go to bed. When you wake up, you can just transfer to a bowl [or container to take to work] and add all the fruit toppings of your choice. Go wild if you must. :)
The recipe below serves 2 bowls. You can adjust if you want to make more. For the coconut cream, i use the one from Waitrose but you can use any. I just want to give you an idea of what it looks like here.
For the coconut shaves, i used a potato peeler to do this so that they are of even thickness. You can get fresh coconuts from Waitrose too. But if you have to crack open your own fresh coconuts, please be very careful as they are quite hard to crack. If somehow you are successful in opening them and collecting the coconut water, use that as substitute for fresh water [as stated below].
2 tbsp chia seeds | 160ml coconut cream | 1 cup of water [or coconut water] | berries | fresh coconut shaves
In a pitcher, add the chia seeds, the coconut cream and cup of water. Whisk until all the coconut cream are combined and no longer lumpy. Cover with tea cloth and set aside on the kitchen counter or the fridge. Go to bed.
When you wake up, give the chia mixture a stir using a whisk to separate the gelatinous seeds that have, by now expanded. If you think it's too thick, you can just add fresh cold water. A little at a time. Transfer to bowls.
Now, add all the berries or any toppings of your choice.
