2 large eggs [lightly whisked with a fork] | 2 tbsp sunflower oil | 1 clove garlic [grated] | small onion [sliced finely] | pancetta [diced small] | mushrooms [sliced] | baby plum or cherry tomatoes [sliced in half] | salt + pepper | cress topping [optional]
Place a shallow frying pan in medium heat, add oil. Once hot, add pancetta and fry until golden. Transfer to a bowl.
Add the garlic and onion to the pan, fry for a minute until soft and golden. Then add the mushrooms and cook for 2-3 minutes. Add the tomatoes, salt + pepper mix in the pan and cook until the tomatoes are just soft.
Add the egg and even it out in the pan. Sprinkle the bacon on top. Turn the heat to low and cook until the eggs have cooked thru.
